People choose caffeine-free teas for all sorts of reasons: a late cup in the evening, cutting back on coffee, or simply loving the taste of herbs and flowers. Here is a short, honest guide to what caffeine free really means, and how to brew a lovely cup of it.
Herbal tea is not tea
True tea, whether black, green, white or oolong, comes from a single plant, Camellia sinensis, and naturally contains caffeine. A herbal tea, often called a tisane, is an infusion of other plants altogether: flowers, leaves, berries, seeds or roots. Chamomile, peppermint and rose petal are tisanes, and they contain no caffeine at all.
One thing worth knowing: not everything sold as a herbal drink is caffeine free. Yerba mate and guarana are plants that do contain caffeine. Every tea we make is naturally caffeine free with no decaffeination process, because the plants themselves contain none.

How to brew loose leaf
Spoon two teaspoons of loose tea into a pot or reusable tea bag, or take one pyramid bag. Pour on freshly boiled water that has rested for a moment, then leave to brew for two to four minutes, to taste. Whole leaves and flowers open slowly, so give them the full few minutes and you will taste the difference.
